A little preserved lemon goes a long way
Preserved lemon is one of those ingredients that makes everything taste a little more interesting. With its distinctive combination of citrus, saltiness and depth, this Ottolenghi marinade brings wonderful flavour to everyday cooking without the need to start from scratch.
Brush it over chicken before roasting, spoon it onto fish, or toss it through cauliflower, carrots and potatoes before they go into the oven. It’s equally lovely stirred through grains or used to add a bright, savoury finish to a simple midweek meal.
